Weekend - Friends and Last Hoorah for Winter (Hopefully)

I had such a nice weekend. It certainly helped that I am feeling so much better!
Saturday I cleaned, ran errands, and took a great nap!!
Then Saturday night Scott and I went to our supper club dinner.
It was hosted by my friend Amanda and it was a Mardi Gras theme.
Lots of yummy food and more importantly lots of fun with wonderful friends!!

Sunday we stayed home from church (we almost never do this - just so you know).
It was cold and snowy!! So I curled up on the couch with a blanket, cup of coffee, and my new Southern Living. I have to tell you that this issue is really a good one.


I also made monkey bread for breakfast.
It is a family favorite especially on cold mornings. There is just something about the yummy smell of cinnamon that just makes you feel warm inside!
You can find the recipe I use here. I do not add the raisins, nuts, or coconut.
Sam said it seemed like Christmas.
I hope he wasn't too disappointed that Santa didn't come!!

Later in the day Scott built a fire and I made cheesy cornbread muffins to go with our chicken tortilla soup (another one of our favorite cold day foods).
For my chicken tortilla soup I just throw a bunch of stuff in a pot.
Several (3+) cups of chicken broth, a bag of frozen corn, a can of black beans, a small - medium onion (chopped), garlic, a little bit of cumin, a little bit of chili powder (1-2 tsp of each - this keeps it very mild), a couple of cans of chopped tomatoes, and 2-3 cooked shredded chicken breasts. That's it!! Easy peasy!! Cook on medium for a while and enjoy!!
You can garnish with shredded cheese, sour cream, and tortilla strips.

We definitely treated yesterday like a Last Hoorah for Winter. I certainly hope so!!!
